Who/What I admire:

My mom: even though her husband has had a major stroke and requires lots of help and assistance, she’s still married and hasn’t strangled him. 😉

I admire those who are driven, but don’t drive over others to get where they want to be

True friends.  Not users, not toxic people, not mean people.

John Wayne:  He fascinates me when I see his interviews

Katherine Hepburn:  what a strong, intelligent woman

Music Music Music!

I’m compiling a list of my favorite songs or singers in random order:

  • Corrina Bailey Rae

  • Josh Groban
  • Michael Buble
  • Christina Aguilera
  • Etta James
  • Billie Holliday
  • Nat King Cole
  • Manhattan Transfer
  • Dixie Chicks (regardless of what Natalie Mains says)
  • K.D. Lang (yes, she’s a little excentric, but she really does have a good voice)
  • Madonna (mostly recent rather than earlier)
  • Sheryl Crow
  • Melissa Ethridge
  • Rascal Flatts
  • 70’s and 80’s just about anything
  • Janet Jackson
  • Peggy Lee
  • NOT RAP
  • Musicals (most anything fun)
  • Swing Music (zoot suit riot)

I want….:

to be able to get healthy again

for my grandma to feel no pain

those who take care of others to be taken care of also

my neice to realize her potential in this world and not settle

the above goes for my own eldest son

to be able to stand up to those I let intimidate me

the gift of compassion and be able to help those who need help

to be less negative and ‘glass half empty’

to be less judgemental and more understanding

to be able to pull the social relationship weeds in my life and never let them in my garden again

Heeeere’s Jonathon!

Ok, since Jonathon wasn’t at the family get-together at UB’s house, here is his cuteness in spite of his mother’s lack of fashion sense.  It was a long day and I was tired and stressed!

Pics of the Family….awwwwww

Here are a few pictures of our family taken at Brian’s house (my older bro).  Jonathon was the only one missing because he had to work…pooooor Jonathon

Sweet Little Cherokee

Not sure where this category will take me, so I’m excited about rediscovering all those things my mom tried to educate me with as a young hooligan!

The Cherokee Nation resides in Talequah, Oklahoma.  There are approximately 10,000 people who still speak the language in the Cherokee Nation.  If you want to learn how to speak the numbers 1-10 in Cherokee, click on this link and scroll to select Beginning Cherokee: Novice Level.  Once you’re there, you can scroll down to the links to select a media player.  It will sound out the numbers for you.  Kinda cool!  More to come!

The Indescribable Calamity Jane

Calamity Jane while working at Buffalo Bill's Wild West show.

This wouldn’t be a true homage to Calamity Jane if I didn’t include information about HER.  So here’s a picture of her and a link to outlaw women information you might find interesting:

http://www.outlawwomen.com/CalamityJane.htm

I am only slightly conflicted, however, because although I think she was an awesomely strong woman, she allegedly fought Native Americans which is part of my heritage.   Finders keepers…..the Indians were here first, right?  Can’t we all just get along? I digress.

My Fave’s

Movies:  Shawshank Redemption, Fried Green Tomatoes, Sound of Music, Willy Wonka and the Chocolate Factory, Finding Nemo, documentaries, indie films.

T.V.: Cesar Millan, DR90210, House Hunters, Ellen, Sundance Channel films.

Food:  Mac & Cheese, Salmon, Sonic Reese’s Blast (extra Reese’s), Presidente’ Margaritas from Chili’s, Bunny’s Burgers (onion fried but i like mine whimpy- – no onions that is), anything sweet (i could skip a meal and just eat sweets), my homemade (somewhat) guacamole dip….which I’ll put on the recipe category later, cookies, cake, brownies, fudge, candy

Shoes, shoes, and even more shoes.  A passion of mine.

Good smelling shampoo, body wash.  Nothing better than smelling clean (Virgo).

Watching OU women play sports.  Really I’m jealous that I’m not doing it, but I’m too old.

Molten Chocolate Cake

Ganache:

4 oz. semisweet chocolate

1/2 C. whipping cream

Grate the chocolate and place it in a bowl. Bring the whipping cream just to a boil and pour it over the chocolate. Slowly stir until smooth. Transfer the mixture into a shallow glass dish and let it cool slightly, about 10 minutes, the place it in the freezer to chill, 1 hour.

Scoop out 10 balls using a 1/2 t. measuring spoon and shape them so they’re round. Chill until ready to use.

Cake:

14 oz. bittersweet chocolate

1 1/4 C. butter

1 T. flour

10 egg yolks

7 T. sugar

Nonstick cooking spray

Powdered sugar, for dusting

Heat the oven to 375°F.

Melt the chocolate and butter in the top of a double boiler set over, but not touching, simmering water. Stir in the flour and remove from the heat to cool slightly.

Whip the yolks in the bowl of an electric mixer and slowly add the sugar until the whisk leaves a thick ribbon that stays on top of the batter when it is lifted out, about 5 minutes.

Pour the chocolate into the yolk-sugar mixture and gently fold them together.

Spray 10 (½-cup) ramekins with cooking spray. Half-fill each with chocolate batter, place 1 ganache ball in the center and then continue filling to the top with more batter.

Place the ramekins on a rimmed baking sheet. (The recipe can be made ahead to this point up to 1 hour in advance and stored at room temperature, or 1 week in advance and frozen, tightly covered.)

Bake the cakes until they begin to pull away from the sides of the ramekins, 13 to 15 minutes. Dust with powdered sugar.

Serves 10.
